ingredients
Peanut butter bars
- 1 stick butter
- 8 ounces chopped white bakers chocolate
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla paste (or extract)
- 3 tablespoons creamy natural peanut butter
- 1 1/4 cup gluten free baking flour
Method
Peanut butter bars
Step 1
Preheat oven to 350.
Step 2
Melt butter, and white chocolate together in 30 second intervals in a microwave safe mixing bowl. Stirring each time.
Step 3
Add sugars, and use hand mixer to beat until well combined.
Step 4
Beat in eggs one at a time for about 2 minutes each to fully incorporate.
Step 5
Add salt, vanilla paste, and peanut butter. Beat to combine well.
Step 6
Add flour, and mix until no clumps remain.
Step 7
Transfer to parchment lined baking dish. Bake for 25-30 minutes until toothpick comes out clean.
Step 8
Allow to cool for 5 minutes, and then transfer to chill in freezer for an additional five. (This will help the chocolate frosting set.)

- 1/2 cup chocolate chips
- 1 tablespoon butter
- 2 tablespoons half and half

Step 1
Melt butter and chocolate chips together in microwave safe bowl 30 seconds at a time, stirring well each break.
Step 2
Whisk in half and half one tablespoon at a time until a glossy, smooth texture forms. Reheat in microwave once more if needed.
Step 3
Pour over peanut butter bars, and spread using rubber or offset spatula.
Step 4
Sprinkle with sea salt, and allow to set for an additional five minutes in the freezer.
Step 5
Cut into squares, and serve.
