ingredients

Chicken

  • 2 chicken breasts
  • 1/4 teaspoon each salt and pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup gluten free flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried basil
  • 1 teaspoon cajun seasoning (I used Old Bay)
  • 2 tablepoons ghee

Method

Chicken

  • Step 1

    Season both sides of chicken breasts with salt, pepper, and garlic powder.) Seasoning the chicken before dredging allows flavor to get into the chicken itself more easily!)

  • Step 2

    In a shallow dish, combine flour, and remaining seasonings, plus salt and pepper to taste. Dredge chicken through to coat evenly.

  • Step 3

    Heat ghee in a 12" skillet. Place chicken in, and cook for about 8 minutes per side, turning once to get golden browned color on each side. Remove from pan and set aside.

Sauce

  • 2 tablepoons butter (or ghee)
  • 1 1/2 cups warm half and half
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon soffrito seasoning (or italian seasoning is fine!)
  • 1/2 teaspoon smoked paprika
  • 1 1/4 teaspoon cajun seasoning
  • to finish lemon juice
  • to finish parsley

Sauce

  • Step 1

    Heat butter in skillet used to cook chicken (chicken still removed)

  • Step 2

    Add warmed cream (just microwave it for 30 seconds prior, this will ensure it doesn't shock in the hot pan) and gently loosen any bits that are sticking to the pan from the chicken cooking.

  • Step 3

    Add spices and whisk to combine. Add salt or pepper as needed, but cajun seasoning is powerful on its own, you will only need light salt if any at all in this step.

  • Step 4

    Allow sauce to simmer lightly, and place chicken back in still simmering as sauce thickens.

  • Step 5

    Finish with a squeeze of lemon juice, and fresh chopped parsley.

  • Step 6

    Serve with a piece of toasted bread, pasta, rice, or mashed potatoes.
