ingredients
- 4 small chicken thighs
- 1/2 chopped yellow onion
- 2 cloves chopped garlic
- 8 ounces softened cream cheese
- 1/2 cup heavy whipping cream
- 1/2 cup buttermilk
- 1 1/2 cups chopped or shredded cheddar cheese
- 5 strips chopped turkey bacon
- 1 pound steamed broccoli
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried chives
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried dill
- 1 teaspoon apple cider vinegar
Method
Step 1
Grill chicken thighs until cooked through, set aside until ready to use.
Step 2
Preheat oven to 350.
Step 3
In a large bowl, combine cream cheese, seasonings/spices, buttermilk, and heavy cream.
Step 4
Steam broccoli (in bag is what I used!) and allow to cool slightly.
Step 5
In a large cast iron skillet with a little bit of cooking oil or butter, cook bacon pieces until crisp.
Step 6
Add onion, and garlic and cook until fragrant. Splash of apple cider vinegar to deglaze the pan.
Step 7
Chop chicken thighs into strips.
Step 8
Add broccoli, and chicken thighs to bowl with cream cheese mixture. Fold together, and add 1 cup of the cheddar cheese. Fold to combine.
Step 9
Pour contents of bowl into skillet, and fold everything together.
Step 10
Top with remaining cheese, and bake for 25-30 minutes until cheese is bubbling and golden brown.
Step 11
Allow to cool slightly before serving.
