ingredients
- 2 halved bell peppers
- 1 tablespoon avocado oil
- 1/2 diced onion
- 4 cloves minced garlic
- 1 pound ground beef
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon coriander
- 1/2 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne
- 1/3 cup warm water
- 1 can (14 oz) petit diced tomatoes
- 1 tablespoon hot sauce
- 4 ounces cubed mild cheddar
- 1/4 cup sour cream (plus more for serving)
- 1/2 cup shredded mild cheddar
Method
Step 1
Preheat your oven to 375.
Step 2
Set a large pan to medium heat, and add avocado oil. Once oil is warm and shimmering, add onion. Cook to soften, about 3 minutes.
Step 3
Add garlic, and cook until fragrant, 2-3 minutes.
Step 4
Add ground beef, breaking up with wooden spoon/spatula. Brown all over.
Step 5
Reduce heat to low. Mix all spices/seasonings with warm water. Pour over ground beef, and mix to combine.
Step 6
Add hot sauce, and can of diced tomatoes.
Step 7
Simmer on low for about 5-7 minutes. Add cubed cheese, and sour cream. Stir to melt.
Step 8
Place halved peppers (seeds and membrane removed) on a parchment lined baking sheet. (cut in half from stem to base)
Step 9
Scoop ground beef into each pepper half. Top with shredded cheese.
Step 10
Bake for 20-25 minutes, until cheese has melted and peppers have softened a bit.
Step 11
Serve garnished with fresh oregano (or cilantro) and a dollop of sour cream. More hot sauce if you want :)
