ingredients
- 2 tablespoons Melted butter
- 1 1/2 cups Half & half or whole milk
- 2 Eggs
- 1 1/2 cups Gluten free flour
- 1 pinch Salt
- 1/2 cup Shredded cheese of your choice
- Caramelized red onion
- 1 tablespoons Butter for greasing muffin tin
Method
Step 1
Preheat oven to 450, with muffin/pop-over pan inside. Whisk together eggs & milk. Stir in melted butter.
Step 2
Whisk in flour & salt. (My choir really of flour is Bob’s red mill 1:1 baking flour)
Step 3
Once wet & dry ingredients are well combined, fold in cheese & onion.
Step 4
Grease muffin pan with butter. Fill each cup about 3/4 of the way.
Step 5
Bake @ 450 for 20 minutes, then reduce heat to 375 without opening oven. Continue to bake for another 15 minutes or until muffins are golden brown. (This will vary depending on the size of your muffin pan)
Step 6
Serve warm with butter, pepper-jelly, bacon jam... Or anything else you like!
