Brownies

  • 1/2 cup butter
  • 8 ounces semi sweet chocolate chips
  • 3/4 cup brown sugar
  • 1/4 cup cane sugar
  • 3 room temperature eggs
  • 2 tablespoons mocha cold brew coffee
  • 3/4 cup gluten free baking flour
  • 1 teaspoon kosher salt
  • 1/2 cup semi sweet chocolate chunks

Method

Brownies

  • Step 1

    Preheat oven to 350. Cut butter into squares, and place in a bowl with chocolate chips.

  • Step 2

    Heat in microwave in 20 second intervals, stirring to melt.

  • Step 3

    Allow to cool for 5-10 minutes.

  • Step 4

    Mix in sugars, stirring to dissolve.

  • Step 5

    One at a time, whisk in three eggs.

  • Step 6

    Whisk in cold brew.

  • Step 7

    Stir in flour, and salt until just combined. Scrape sides of bowl as needed.

  • Step 8

    Transfer mixture to a parchment lined rectangular barking tray.

  • Step 9

    Bake for 25-30 minutes, until toothpick comes out clean.

  • Step 10

    Allow to cool before frosting.

Caramel mocha frosting

  • 3 squares ghiardelli chocolate caramel bar
  • 4 tablespoons butter
  • 1 tablespoon mocha cold brew
  • 2 tablespoons heavy whipping cream
  • 2 cups powdered sugar
  • 1/2 teaspoon diamond crystal kosher salt (less if using Morton)

Caramel mocha frosting

  • Step 1

    Combine butter and chocolate squares in a bowl. Heat in microwave in 20 second intervals, stirring between each time to melt together.

  • Step 2

    Allow to cool for 5-10 minutes.

  • Step 3

    Using hand mixer, whisk in coffee, and heavy cream to combine until smooth.

  • Step 4

    Add salt, and about 1/3 of the powdered sugar. Whisk to combine.

  • Step 5

    Continue adding powdered sugar until desired consistency is reached. Set aside until ready to use, and brownies have cooled completely.

  • Step 6

    Place brownies on cutting board, spread frosting over, and cut into 12 squares.
