ingredients

  • 1 chopped yellow onion
  • 4 cloves crushed garlic
  • 1 medium chopped red pepper
  • 1/2 pound peeled and deveined shrimp
  • 3 tablespoon butter
  • 1 1/2 tablespoon gluten free all purpose flour
  • 1 1/2 cups milk
  • 2 cups shredded sharp cheddar
  • 2 cups shredded smoked gouda
  • 1 squeeze of lemon juice
  • 2 packages of cooked gnocchi
  • 1 tablespoon cajun seasoning, adjustable
  • 1 tsp each garlic, onion, paprika.
  • To Taste salt, pepper, cayenne

Method

  • Step 1

    Cook two packages of gluten free gnocchi to al dente/almost done! & preheat oven to 350. In a cast iron skillet, heat chopped onion, crushed garlic, and red pepper. Season shrimp on both sides with a generous pinch of cajun seasoning. Add shrimp to pan, and cook until just getting color. Remove everything from pan.

  • Step 2

    In that pan, add butter & melt. Whisk in flour, and then slowly stream in milk whisking to combine. Add in your spices at this point. (garlic & onion powder, paprika, more cajun seasoning, salt, pepper & cayenne) taste, and adjust as necessary.

  • Step 3

    Add in cheeses, stir to melt in. Return your veggies and shrimp, add a squeeze of lemon juice, and fold in your nearly cooked gnocchi. Bake for 15-20 minutes, and broil on low for 2. (watch carefully, you want just a golden brown crust to form!)
