Cajun bbq salmon, southern smoked creamed corn, with bacon wrapped green beans.

ingredients
- 2 fillets salmon
- 2 teaspoons avocado oil
- 2 teaspoons cajun bbq seasoning (I prefer creole depot)
- 8 trimmed green beans
- 5 tablespoons butter
- 9 slices turkey bacon
- 4 ears of corn
- 1 chopped yellow onion
- 1/2 cup grated smoked gouda, or parmesan cheese.
- 3 cloves chopped garlic
- 3/4 cup white wine
- 1/2 cup heavy cream
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh thyme
- salt and pepper, to taste
Method
Step 1
Preheat oven to 350.
Step 2
Cut four slices of the turkey bacon in half lengthwise. Wrap each half around a green bean.
Step 3
Place on a baking sheet, and bake for 10-12 minutes until crisping begins.
Step 4
Rub salmon with avocado oil, and cajun BBQ seasoning (or your favorite BBQ rub)
Step 5
Remove green beans from oven, and on the same pan... place salmon skin side down.
Step 6
Cook for 10-12 minutes, until salmon is cooked through.
Step 7
For the corn... In a cast iron skillet, melt 5 tablespoons of butter.
Step 8
Chop the remaining turkey bacon into bits, and place into the skillet cooking until crispy.
Step 9
Remove bacon from skillet and set aside.
Step 10
In the same skillet drop in the onion, and cook to soften a bit.
Step 11
Add garlic, and corn. Cook for a few minutes to bring everything together.
Step 12
Stir in red pepper flakes, and smoked paprika.
Step 13
Add white wine, and simmer for 2 minutes.
Step 14
Add heavy cream, and cook on low for about 10 minutes to soften corn and reduce liquid.
Step 15
Stir in cheese (smoked gouda would be great, but parmesan works too!)
Step 16
Return bacon to skillet.
Step 17
Serve all together, with a lemon wedge for squeezing.
