ingredients

  • 1 1/2 cups gluten free flour (I prefer King Arthur)
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon diamond crystal kosher salt
  • 1/3 cup buttermilk
  • 2 room temperature eggs
  • 3 tablespoons apple sauce
  • 2 honey crisp apples
  • vegetable oil, for frying
  • 2 cups powdered sugar
  • 1/3 cup heavy cream
  • 1 tablespoon maple syrup

Method

  • Step 1

    In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and sugar.

  • Step 2

    In a second bowl, whisk together buttermilk, eggs, and apple sauce until smooth.

  • Step 3

    Create a well in the center if your dry ingredients, pour in wet ingredients. Mix gently until just combined, and no flour streaks show.

  • Step 4

    Peel, and dice up your apples (removing cores) and fold into batter.

  • Step 5

    Heat about 2" of oil in a medium-large dutch oven or heavy bottomed pot.

  • Step 6

    Carefully drop in about 1/4 spoonfuls of batter into oil.

  • Step 7

    Fry for 2 minutes per side, until golden browned.

  • Step 8

    Remove from oil and set on wire rack to drain.

  • Step 9

    While fritters are cooling, mix together powdered sugar, maple syrup, and heavy cream. (add more or less heavy cream as desired for consistency)

  • Step 10

    Dunk fritters into icing mixture, and set back on wire rack to drip and set.
