Buttermilk Cornbread

ingredients

  • 1 cup cornmeal (self rising is great!)
  • 1 cup gluten free baking flour
  • 2 tablespoons sugar
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup melted butter
  • 1 cup plus two tablespoons buttermilk
  • 2 eggs
  • 2 tablespoons sliced butter for topping
  • A pinch of sugar for topping

Method

  • Step 1

    Preheat oven to 400. Combine dry ingredients in a bowl.

  • Step 2

    In a second bowl, melt butter, add buttermilk. Whisk in eggs.

  • Step 3

    Combine wet and dry ingredients, mixing until just combined .(overmixing will lead to dense bread!)

  • Step 4

    Transfer mixture to a greased baking dish. (I used a round cake pan, but anything deep, about 8x8 is fine for this recipe!)

  • Step 5

    Top with slices of butter, and a sprinkle of sugar (optional, but delicious!)

  • Step 6

    Bake for 25 minutes, and allow to cool slightly before slicing.

  • Step 7

    This recipe is perfect for setting on the dinner table... but if you're having the whole family for a cookout.. double up :)
