Buffalo chicken gnocchi bake

"Sweet and sorta spicy buffalo sauce, mixed with melty cheddar, cream cheese, and creamy ricotta. Tossed with gnocchi and topped with crisp green onion. A one pan way to make buffalo chicken dip an acceptable meal :P"

ingredients

  • 2 cooked and shredded chicken breasts
  • 1 tablespoon olive oil
  • 1/2 stick butter
  • 1 chopped white onion
  • 2 cloves minced garlic
  • 1 teaspoon fresh thyme
  • 8 ounces room temperature cream cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup hot sauce
  • 1/4 cup honey
  • 6 chopped green onion (save tops for garnish)
  • 2 cups shredded cheddar cheese, divided.
  • 1 pound uncooked gnocchi
  • 1/4 cup chicken broth

Method

  • Step 1

    Preheat oven to 400. Meanwhile... In a cast iron pan, heat olive oil on medium heat. Add butter, and melt.

  • Step 2

    Add onion, and cook until onion begins to turn translucent. 2-5 minutes.

  • Step 3

    Add thyme, and garlic. Cook until fragrant, 2-3 minutes.

  • Step 4

    Add cream cheese, and ricotta. Stir to melt.

  • Step 5

    Add hot sauce, and honey. Stir to combine.

  • Step 6

    Turn off heat, add chicken (should already be cooked- I just boil them ahead of time), and the bottom half of chopped green onions.

  • Step 7

    Add half of the shredded cheddar, uncooked gnocchi, and chicken broth. Toss to combine.

  • Step 8

    Top with remaining cheddar cheese. Cover with foil, and bake for 30 minutes.

  • Step 9

    Uncover, and return to oven for an additional 10 minutes, until cheese is golden and lightly crispy.
