Buffalo Cauliflower Tacos

ingredients

  • 1/2 head cauliflower florets
  • 1/3 cup or more to desired consistency gluten free flour
  • 1/2 cup half&half (or milk alternative)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon paprika
  • 1/4 teaspoon each salt and pepper
  • 2 tablepoons butter (or vegan butter if needed)
  • 2 tablepoons hot sauce
  • 2 tablepoons honey (or agave)
  • tortillas
  • bleu cheese dressing (or ranch/vegan ranch)
  • red cabbage
  • chives

Method

  • Step 1

    Break cauliflower into florets, and preheat oven to 450.

  • Step 2

    In a bowl, combine powdered spices, flour, salt and pepper, and milk. Stir to combine and create a batter like consistency. (adjust flour, and milk as needed to create desired consistency)

  • Step 3

    Toss cauliflower through batter, and transfer to a baking tray coated with vegetable oil. Bake for 20 minutes, flipping at halfway.

  • Step 4

    While cauliflower is baking... make your buffalo sauce by heating butter, hot sauce, and honey (or alternatives) in a sauce pan. Allow to cool until cauliflower is finished.

  • Step 5

    Toss cauliflower through buffalo sauce, and return to baking tray... cook for an additional 10-15 minutes until cauliflower has a crisp outside.

  • Step 6

    Layer tortillas with bleu cheese or ranch dressing, baked cauliflower, crumbled cheese if desired, red cabbage slices (add a nice crunch) and chives to finish.

  • Step 7

    You could also just eat this buffalo cauliflower on its own with a side of dressing for a "hot wing" alternative :)
