ingredients
- 1 stick softened butter
- 1 cup brown sugar
- 2 room temperature eggs
- 1 teaspoon vanilla paste
- 1 teaspoon cinnamon
- 2 cups flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup milk
- 5 peeled and chopped honey crisp apples
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 teaspoon vanilla paste
- 1/4 cup brown sugar
- 1/2 teaspoon corn starch
- 1 tablespoon vanilla bean ghee, or butter for skillet.
Method
Step 1
Preheat oven to 350.
Step 2
In a stand mixer, (or with a hand mixer) whisk butter on medium-high for about 5 minutes until light.
Step 3
Add 1 cup of brown sugar, and whisk for another 3-5 minutes until light and fluffy.
Step 4
Whisk in eggs one at a time, for about 2 minutes each.
Step 5
Whisk in 1 teaspoon vanilla, and teaspoon of cinnamon.
Step 6
Combine flour with baking powder, and salt.
Step 7
Reduce speed to medium, and add flour mixture in thirds. Alternate with milk to create cake batter. Set aside until ready to use.
Step 8
For the apples, the peel/chop doesn't have to be perfect. Think of the size pieces you want to bite into, and cut like that :)
Step 9
Toss apples with brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Set aside.
Step 10
Melt ghee in a 15" cast iron skillet.
Step 11
Add apples, and toss to coat in ghee (or butter works fine too) Turn off heat.
Step 12
Use a scooper or spoon to drop cake batter ontop of apples.
Step 13
Bake 35-40 minutes, until cake is golden brown.
Step 14
Serve warm topped with vanilla ice cream.
