ingredients
- 2 sticks salted butter
- 1 1/4 cups brown sugar
- 1/2 cup cane sugar
- 2 eggs, room temp.
- 2 tablespoon maple syrup
- 1 tablespoon vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp all spice
- 1 tsp cinnamon
- 1 3/4 cups gluten free baking flour
- 2 3/4 cups old fashioned rolled oats (not instant)
Method
Step 1
Brown one stick of butter in a small sauce pan. Allow to cool.
Step 2
Add other stick, plus sugars to a bowl. Whisk, while streaming in cooled browned butter.
Step 3
Add eggs one at a time, whisking two minutes each.
Step 4
Add maple syrup, and vanilla. Mix.
Step 5
Add baking powder and soda, mix.
Step 6
Add baking flour, mix well scraping down sides of bowl as needed.
Step 7
Mix in rolled oats. Chill in fridge for at least 40 minutes, up to overnight. If chilling over night, allow dough to thaw for 10 minutes before using.
Step 8
When ready to bake: Preheat oven to 350 and scoop spoonfuls of dough onto parchment lined baking tray.
Step 9
Bake for 10-13 minutes until golden. Cookies will seem under done, but set up as they cool.
Step 10
Allow to cool for 15 minutes on baking tray.
