Bourbon baked plums

ingredients

  • 5 plums
  • 1/2 stick unsalted butter, cubed
  • 1/2 cup brown sugar
  • 1 tablespoon bourbon
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 5 crushed cinnamon graham crackers (I like Marilyn's Gluten Free Gourmet)
  • 1 scoop vanilla ice cream

Method

  • Step 1

    Preheat oven to 350.

  • Step 2

    Place whole plums in a cast iron skillet.

  • Step 3

    Layer on cubed butter, and brown sugar.

  • Step 4

    Add cinnamon, bourbon, and vanilla.

  • Step 5

    Give a little toss, and bake for 1-1.5 hours, until plums are softened and caramelized sauce forms.

  • Step 6

    Allow to cool slightly, top with crushed graham crackers (or desired crushed cookie!) (I used Marilyn's Gourmet Gluten Free Grahams)

  • Step 7

    Serve warm with a big scoop of vanilla ice cream. (careful to avoid plum pit's when digging in!)
