Beer battered onion rings

ingredients

  • 2 sweet/yellow onions
  • 2 cups gluten free all purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon diamond crystal kosher salt (1/2 if using Morton)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 cups gluten free beer (available at Whole Foods)
  • 2 cups oil for frying, or more as needed

Method

  • Step 1

    Cut bottom off of onions (not the eye/knot) and remove skins.

  • Step 2

    Cut width wise into about 1/2" rounds. Carefully break apart pieces to create your "rings".

  • Step 3

    Place 1/2 cup of flour into a shallow dish. Toss onion rings through. Shake off excess and set aside.

  • Step 4

    In a medium-large bowl.. combine remaining flour, corn starch, salt&pepper, and seasonings.

  • Step 5

    Mix in beer, measuring out 1 1/2 cups not including the foam.

  • Step 6

    Whisk until no clumps remain.

  • Step 7

    Toss onion rings through batter to coat.

  • Step 8

    Heat oil in a heavy bottomed pot. About 2" deep is good.

  • Step 9

    Allow excess batter to drip off onion rings, and carefully place one by one into hot oil... swirling each ring a bit, so they don't stick to the bottom of the pot.

  • Step 10

    Fry 3-5 minutes until golden brown.

  • Step 11

    Remove from oil, and place on a wire rack to drain excess oil. Sprinkle with kosher salt while hot.
