ingredients
- 1 cup gluten free all purpose flour
- 1/4 cup milk (I used half and half)
- 3/4 cup gluten free beer
- 1/4 teaspoon kosher salt
- 5 ounces cheese curds
- 1 cup vegetable oil, for frying
Method
Step 1
In a bowl, whisk together flour, milk, beer, and salt... whisk until it is smooth and thick like pancake batter.
Step 2
Drop in cheese curds, and use a rubber spatula to fold and coat.
Step 3
Heat oil on medium in a large sauce pan. (I like to shallow fry more than deep fry... so it's not so much oil!)
Step 4
Use a fork to drop in cheese curds one by one, in batches of about 5. Gently swirl in while you're dropping each bit to avoid sticking to pan.
Step 5
Give a gentle shake to pan to further avoid sticking, and swirl to brown on all sides.
Step 6
Remove with slotted spoon, and drain excess oil on paper towel lined plate.
Step 7
Dust with flaky salt while still warm.
Step 8
Serve with your favorite dipping sauce! (I mixed honey and hot sauce together in equal parts)
