Basil peach chicken salad

ingredients

  • 2 boiled chicken breasts
  • 1 lemon
  • 1 diced shallot
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon diamond crystal kosher salt (1/4 if using Morton)
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 2 chopped green onions
  • 1 cup red needles grapes, sliced into halves
  • 1/2 cup chopped walnuts
  • 1 tablespoon chopped basil
  • 1 chopped peach
  • 1 tablespoon grainy mustard
  • 1/2 cup or more to taste mayonnaise
  • 1 teaspoon red wine vinegar
  • 1 teaspoon olive oil

Method

  • Step 1

    Chop, or shred chicken breasts. Place in a large bowl.

  • Step 2

    Add the zest of one lemon, and about a teaspoon of the juice.

  • Step 3

    Add all other ingredients, and toss together to evenly distribute.

  • Step 4

    Adjust mayo, salt and pepper as needed.

  • Step 5

    Serve as a sandwich, with crackers, or eat just as is :) Highly recommend a drizzle of spicy peach honey to finish. My fav' by Red Clay.
