Baked eggplant fries

ingredients

  • 1 eggplant
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1/4 cup all-purpose flour of choice
  • 2 cups breadcrumbs (I used Pork Panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • cooking oil (for spraying or drizzling)

Method

  • Step 1

    Preheat oven to 375.

  • Step 2

    remove stem from eggplant, and slice in half vertically. Cut those pieces in half again, and then slice into 1/4" sticks, (like fries).

  • Step 3

    Place eggplant sticks onto a parchment lined baking sheet, and sprinkle with salt. Allow to set for about 10 minutes to draw out moisture. Pat dry with kitchen towel, removing as much moisture as possible. (this ensures your fries get crispy)

  • Step 4

    Sprinkle flour over eggplant sticks, and toss together to coat.

  • Step 5

    Whisk eggs into a deep bowl. Shake excess flour off of eggplant, and toss through the egg.

  • Step 6

    In another bowl, combine bread crumbs (I used pork panko crumbs but you can use whatever your favorite is!) with garlic powder, and parsley. (salt if your breadcrumb mix does not already include it)

  • Step 7

    Shake excess egg off of eggplant sticks, and toss again through the breadcrumb mix.

  • Step 8

    Place coated sticks on a baking sheet fitted with a wire rack, in one layer.

  • Step 9

    Spray or drizzle with cooking oil, and bake for 20-25 minutes until golden brown and crisp.

  • Step 10

    Sprinkle with flaky salt, and fresh grated parmesan to serve alongside your favorite dip.
