Bacon balsamic brussels sprouts

ingredients

  • 4 slices thick cut bacon
  • 1 tablespoon grapeseed (or other high heat) oil
  • 1 package brussels sprouts
  • 1 teaspoon kosher salt
  • 1/4 cup chopped shallot
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons unsalted butter
  • 1/4 cup chopped pecans (optional)
  • for serving hot honey (optional)

Method

  • Step 1

    Prepare your Brussels sprouts by removing the "softer" outer leaves, cutting off the stem, and slicing them in half. (you can buy them already prepared as well to save some time)

  • Step 2

    Cook bacon in your skillet on medium heat, until desired level of crispy.

  • Step 3

    Remove bacon from the pan, and remove the bacon grease. (at least most of it, doesn't have to be perfect!)

  • Step 4

    Add grapeseed (or other) oil to pan, and toss in Brussels sprouts.

  • Step 5

    Sprinkle with salt and arrange in one layer, cook undisturbed for 5-7 minutes until sprouts begin to brown and crisp. Toss and repeat.

  • Step 6

    Add shallot, and cook to soften. About 2-3 minutes.

  • Step 7

    Add balsamic vinegar, and use a wooden spoon to scrape bottom of pan & release any fond that has formed.

  • Step 8

    Add butter, and red pepper flakes. Toss to melt butter.

  • Step 9

    Serve topped with chopped bacon, and optional (but encouraged): a drizzle of hot honey, and chopped roasted pecans.
