ingredients

  • 5 chicken cutlets
  • 5 pineapple rings (or desired amount of cubes)
  • 7 ounces or one package halloumi cheese
  • 2 tablespoons apple butter
  • 1/4 cup pineapple juice
  • 2 tablespoons liquid aminos (or soy sauce)
  • 1 teaspoon dried rosemary
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 7 skewers, for grilling.
  • 1 clove crushed Garlic

Method

  • Step 1

    Cut chicken cutlets into about 1" pieces. Season with salt.

  • Step 2

    In a bowl, combine apple butter, liquid aminos, rosemary, garlic, pineapple juice, and apple cider vinegar. Whisk together, and toss in chicken to coat.

  • Step 3

    Allow chicken to marinate for at least 30 minutes, ideally a few hours.

  • Step 4

    Arrange chicken pieces, pineapple, and halloumi on skewers.

  • Step 5

    In a greased grill pan, or on an outdoor grill, cook for about 8-10 minutes per side. Until grill marks appear and chicken is cooked through.

  • Step 6

    Alternatively: Place on baking sheet with wire rack, broil for 8-10 minutes per side.

  • Step 7

    Serve with your favorite bbq sauce.
