Instant Yeast Recipe
- 360 grams Bread Flour
- 2 egg yolks
- 175 grams Milk
- 10 grams Honey (or Sugar)
- Salt
- 5 grams Butter
- Instant Yeast / 10g Fresh Yeast

- 60 grams Starter
- 120 grams Flour
- 60 grams Water
- 25 grams Sugar

Main Dough
- All of Sweet Stiff Starter
- Bread Flour
- Milk
- 1 egg yolk
- 45 grams Sugar
- 4 grams Salt
- 40 grams Butter

Coffee Crust
- 60 grams Softened Butter
- 60 grams Sugar
- 1 egg
- 70 grams All-Purpose Flour
- 1 tablespoon Instant Coffee mixed with 2 Tbsp Hot Water

Filling
- Cookie Butter
- 150 grams Lotus Biscoff Biscuits
- A pinch of salt
- 25 grams brown sugar
- 10 grams Evaporated Milk
Method
Step 1
Mix everything except butter until the dough is strong and fairly elastic.
Step 2
Add butter gradually and knead until window-pane stage.
Step 3
Proof the dough until double.
Step 4
Divide the dough into equal portions and roll into smooth balls. Cover and rest for 15min.
Step 5
Proof until double.
Step 6
Pipe the coffee crème in a spiral pattern on top of the buns.
Step 7
Bake at 180C for 12min then 210C for 5min
Step 8
Poke a small hole in the base of the buns and pipe in the cookie butter
Step 9
Best enjoyed when fresh out of the oven!
