- 5 medium potatoes
- 1 handful of fresh dill, chopped
- 1 tablespoon unsalted butter
- Kosher salt, to taste
- 2 tablespoons vegetable oil
- 300 grams chicken breast, diced
- 2 green peppers, seeded and chopped
- 1 tomatoe, chopped
- 1 small onion, chopped
- 1 teaspoon tomato paste
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1/4 cup water
Method
Step 1
Peel and boil the potatoes until tender. Drain and mash with butter, dill, and salt until smooth. Set aside.
Step 2
Heat vegetable oil in a pan over medium heat. Add diced chicken and sauté until lightly browned.
Step 3
Add onions and cook until translucent. Stir in green peppers and tomatoes, cooking until softened.
Step 4
Mix tomato paste with water and add to the pan, along with thyme and red pepper flakes. Cook for 5 minutes, then remove from heat and let cool slightly.

Preheat oven to 400°F.

Form mashed potatoes into small bowls or nests. Place them on a baking tray lined with parchment paper.

Fill each potato bowl with a layer of shredded mozzarella, followed by chicken filling, and top with more mozzarella.
