This 15 Minute Udon Stir Fry is filled with veggies and tossed is a sweet and savory sauce. This recipe makes the perfect quick and easy lunch or dinner.

ingredients

  • 1 udon noodles
  • 200 grams carrot thinly sliced (100g)
  • 4 spring onions thinly sliced
  • 100 grams white cabbage thinly sliced
  • 50-100g brown mushrooms thinly sliced
  • 2 garlic cloves
  • fresh coriander

ingredients

Sauce

  • 1 tablespoon vegan fish sauce (or soy sauce)
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar
  • some black pepper
  • sesame oil
  • walnut sized piece ginger

Method

  • Step 1

    Cut the ginger and mix all ingredients for the sauce until well combined. Press the garlic and slice the spring onion, carrot, cabbage & mushrooms.

  • Step 2

    Heat some coconut oil in a large pan and add the garlic & spring onion. Fry for a few minutes, then add the veggies and fry again for 5 min.

  • Step 3

    Add the udon noodles and the sauce and mix well. Serve with fresh coriander, lime juice and sesame seeds. Enjoy.
