ingredients
- 1 udon noodles
- 200 grams carrot thinly sliced (100g)
- 4 spring onions thinly sliced
- 100 grams white cabbage thinly sliced
- 50-100g brown mushrooms thinly sliced
- 2 garlic cloves
- fresh coriander
ingredients
Sauce
- 1 tablespoon vegan fish sauce (or soy sauce)
- 1 teaspoon rice vinegar
- 1 teaspoon brown sugar
- some black pepper
- sesame oil
- walnut sized piece ginger
Method
Step 1
Cut the ginger and mix all ingredients for the sauce until well combined. Press the garlic and slice the spring onion, carrot, cabbage & mushrooms.
Step 2
Heat some coconut oil in a large pan and add the garlic & spring onion. Fry for a few minutes, then add the veggies and fry again for 5 min.
Step 3
Add the udon noodles and the sauce and mix well. Serve with fresh coriander, lime juice and sesame seeds. Enjoy.
