  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 1 heaping cup dark chocolate, chopped
  • 3 large eggs
  • 1/2 teaspoon instant coffee or espresso powder
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/4 teaspoon fine sea salt

Method

  • Step 1

    Preheat the oven to 350°F and line an 8x8 inch square baking tin with parchment paper.

  • Step 2

    In a heatproof bowl, place the chopped chocolate. Set aside while browning the butter.

  • Step 3

    In a saucepan, melt the butter over medium heat. Stir continuously until the butter turns a golden brown and gives off a nutty aroma. Pour this hot brown butter over the chopped chocolate, stirring until the chocolate is completely melted. Allow this mixture to cool.

  • Step 4

    Using a hand mixer, whisk eggs, instant coffee, and sugar until the mixture turns pale and slightly frothy, about 3 minutes. Add vanilla and the cooled chocolate-butter mixture, then whisk until well combined.

  • Step 5

    Gently fold in the flour and salt until just combined.

  • Step 6

    Pour the batter into the prepared baking dish and smooth the top. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

    Allow the brownies to cool in the pan before slicing.
