Tsire Koftas

"Tsire is known to have originated amongst the Hausa (Haoussa) people of Northern Nigeria, who immigrated and settled in Sudan, on their way to perform pilgrimage in Mecca. This spice mix has a sweet, nutty, spicy flavour with a powerful hint of chili. It is used as a coating for kebabs throughout West Africa. It also serves as a garnish on cooked dishes. In Northern Nigeria it is known as tsire while in the south it is called suya. This dish is extremely popular in northern Cameroon, Nigeria, Niger, and in Sudan where it is called agashe. The spice mixture is made from ground peanuts, cinnamon, cloves, nutmeg, garlic powder , onion powder , ground ginger, hot red pepper, coriander and salt. The meat is dipped in beaten egg and then rolled in the spice mixture. It is then grilled. I like to serve the kebabs with some garlic sauce, pita bread and blistered tomatoes @sarchakra"

Koftas

  • 16 oz ground lamb
  • 1 chopped onion
  • 2 chopped garlic cloves
  • salt to taste
  • 2 teaspoon pepper
  • 1 teaspoon allspice powder
  • 1 egg
  • 1 teaspoon dried mint
  • 2 tablespoon Greek yogurt
  • 2 teaspoon paprika

Method

For the Koftas

  • Step 1

    Soak bamboo skewers in a bowl of water for 30 mins. In a food processor chop onion and garlic. Add in Greek yogurt, ground lamb, beaten egg, paprika, allspice powder, dried mint, salt and pepper. Mix till smooth.

  • Step 2

    Divide the mixture into equal portions and shape into oblong shaped kebabs. Keep in the fridge for 20 mins. Thread each kebab into a wooden skewer.

  • Step 3

    Beat an egg. Dip each kebab into the egg and roll on the tsire mixture.

  • Step 4

    Place kebabs on a greased grill. Cook all sides till the meat is cooked and slightly charred. Repeat for the rest. Keep on a serving plate.

  • Step 5

    Serve kebabs with garlic sauce, pita bread and blistered tomatoes.

Tsire Powder

  • 1/2 cup dry roasted peanuts
  • 2 teaspoon hot red pepper
  • 1 teaspoon ground ginger
  • 2 teaspoon ground garlic
  • 1 teaspoon ground onion
  • 1 teaspoon coriander seeds
  • 1/4 teaspoon nutmeg
  • 1 inch cinnamon
  • 3 cloves
  • salt

For the Tsire Powder

  • Step 1

    In a food processor grind the peanuts to a coarse powder.

  • Step 2

    Add the rest of the spices.
