ingredients

  • 1 cup nuggets soya
  • 2 cubed potatoes
  • 1 bay leaf
  • 4 cloves
  • 1 inch cinnamon
  • 2 cardamom
  • 1 tablespoon cumin seeds
  • a pinch of asafetida
  • 1 1/4 chopped onion
  • 1 tablespoon paste ginger
  • 1 tablespoon paste garlic
  • 1 teaspoon caraway seeds
  • 4 chopped green chilies
  • A small handful curry leaves
  • 1 chopped tomato
  • 3 tablespoon chopped coriander leaf
  • 1 tablespoon juice lime
  • 1 teaspoon sugar
  • 1 tablespoon chaat masala
  • 1 teaspoon powder garam masala
  • 1 1/2 tablespoon powder turmeric
  • 1 teaspoon dried mint
  • salt
  • 2 tablespoon vegetable oil

Method

  • Step 1

    Cook soya nuggets and cubed potatoes with salt, ½ tsp turmeric and 1 cup of water in the pressure cooker for 1 whistle.

  • Step 2

    While the nuggets are cooking, make the chutney. Blend together chopped coriander, lime juice, 2 green chilies, ¼ chopped onion, chaat masala, a pinch of sugar. If you don't want to use the entire chutney, leftovers can be kept in the fridge for later.

  • Step 3

    Heat 2 tbsp of oil and temper bay leaf, cumin seeds, cloves, cardamom, cinnamon, asafetida, curry leaves for a couple of minutes.

  • Step 4

    Add in 1 chopped onion, 2 green chilies and cook till soft. Add ginger and garlic and cook till the raw smell goes.

  • Step 5

    Add tomato and cook on medium heat till the oil starts floating. Add boiled soya nuggets and potato, salt, coriander chutney, turmeric mint, red chili powder and garam masala. Cook a few mins till the mixture becomes a bit dry. No additional water is needed.
