ingredients
- 6 chicken drumsticks
- Kosher salt
- 1 cup milk
- 2 teaspoons vinegar
- 2 tablespoons black pepper
- 2 tablespoons onion powder
- 1 tablespoon garlic powder
- 1 black pepper
- 1 1/2 cups all purpose flour
- 2 tsp oregano
- 1 tbsp paprika
- 1 tbsp dried basil
- 2 tsp dried thyme
- 1 egg
- crisco for frying
- 1/2 cup mayonnaise
- 2 tbsp sriracha sauce
Method
Step 1
Get the chicken drumsticks ready in a bow. Rub salt all over the pieces and refrigerate overnight. Especially for bigger pieces, this is key.
Step 2
Mix vinegar into the milk. Keep aside for 5 mins. Let it slightly curdle into buttermilk. Beat the egg into the mixture.
Step 3
Dip chicken into the buttermilk egg mixture. In a bowl mix in flour, onion flakes, garlic powder, dried oregano, basil, thyme, salt, black pepper and paprika. Shake each chicken piece off the egg mixture, and dredge in the flour mixture.
Step 4
Heat Crisco in a heavy Dutch oven. Fry on medium heat till the chicken is thoroughly cooked. This can take anywhere between 20-30 minutes depending on the size of the chicken drumsticks. Drain on kitchen towels.
Step 5
Mix mayonnaise and sriracha. Pour in serving cup. Serve with fried chicken.
