Tacos
- 1/2 cup grated Mexican cheese plus for garnish
- 1 cup shredded rotisserie chicken
- 2 tsp chipotle seasoning
- 2 tsp oil
- 5 hard shell tacos
Method
Step 1
In a bowl add shredded rotisserie chicken, oil and chipotle seasoning.
Step 2
Fill taco shells with chicken and grated cheese. Bake for 5 mins till the cheese melts.
Step 3
Top baked taco shells with bean salad, avocado salad and some more cheese.
Step 4
Garnish with some more cheese and parsley. Enjoy the crunchy deliciousness.

Black Bean Salad
- 1 can black beans
- 1 chopped tomato
- 1/2 chopped red onion
- 2 tsp taco seasoning
- 1 tbsp chopped curly leaf parsley
- salt
- juice of 1/2 a lemon
Step 1
Make the bean salad: in a bowl combine drained black beans, salt, onion, lemon juice, taco seasoning, parsley and tomato.

Avocado Salad
- 1 chopped avocado
- juice of 1/2 a lime
- salt
- 1 tsp black pepper
- 2 cloves grated garlic
Step 1
Make the avocado salad: in a bowl combine chopped avocado, salt, pepper, garlic and lime juice. Mix gently. Keep aside.
