Gajar Halwa (Carrot Pudding)

"Halwa in Arabic means ‘sweet’. Gajar Halwa is one of the most delicious Indian desserts. It is surprisingly easy to make at home. Freshly grated carrots cooked in milk and milk solids till they almost become a jam is subtly flavored with a hint of cardamom. Add to that nuts and raisins toasted in some ghee- sounds absolutely heavenly right? Do try this recipe and let me know how it goes."

ingredients

  • 4 cups grated carrots
  • 1 cup sugar
  • 1 teaspoon powdered green cardamom
  • 1/2 cup Mawa/milk solids
  • 2 cups milk
  • 3 tbsp divided ghee
  • 15 pistachios
  • 10 cashews
  • 10 golden raisins

Method

  • Step 1

    Pour milk in a heavy bottomed pan. Let it come to a boil.

  • Step 2

    Put the grated carrots in. Turn the heat to medium. Cook the carrots in the milk till they are cooked. This should take about 25 minutes.

  • Step 3

    Add the sugar. Let the sugar melt and the mixture starts to reduce.

  • Step 4

    Add crumbled mawa. Put in 2 tbsp ghee. Cook till the mixture dries up.

  • Step 5

    Add cardamom powder.

  • Step 6

    In a small pan heat 1 tbsp ghee. Fry the pistachios, cashews and raisins turn aromatic and golden.

  • Step 7

    Sprinkle the toasted nuts on the Halwa. Stir. Halwa is ready to be served. You could eat it hot or cold.

  • Step 8

    For the health conscious, you can definitely make it slightly healthier by reducing the amount of sugar. But eating this in moderation once in while really can’t harm anyone, right? Do not rush with this dish. Slow cooking is key.
