ingredients

  • 1 1/2 cups washed and pitted cherry
  • 1 tbsp butter
  • 4 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all purpose flour
  • 1/2 cup milk
  • 1/2 cup cream
  • 1 tsp madagascar vanilla
  • 1 tsp rum extract
  • for dusting confectioners sugar

Method

  • Step 1

    Heat the oven to 325ºF. Butter a 9 inch round pan to cover the bottom and sides of an ovenproof dish..

  • Step 2

    Pit the cherries and arrange the cherries at the bottom of the pan till it is covered.

  • Step 3

    In a bowl using a hand blender mix the eggs and sugar till it becomes frothy.

  • Step 4

    Add in AP flour, milk, cream, rum extract, vanilla extract, and blend into a smooth mixture.

  • Step 5

    Pour the egg mixture on the prepared cherries. Cook in the oven for 35 mins till golden. Test that the center comes out clean.

  • Step 6

    Serve with a dusting of confectioners sugar.
