We're loving this fresh cocktail made with coconut cream and topped with a cherry to give all of the vibes of a ~classic~ Piña Colada.

- 3 tablespoons cream of coconut, (from a 15 ounce can)
- 3 tablespoons coconut sugar, (or raw cane sugar)
- 2 tablespoons coconut water
- 1 lime, juiced and zested
- 4 ounces light rum
- 1 (12 ounce) can Spindrift Pineapple
- Fresh mint, for garnish
- Cherries, for garnish
In a cocktail shaker, mix cream of coconut, sugar, coconut water, lime juice, lime zest and rum until cream of coconut is fully emulsified. Between two glasses, strain and pour over ice. Top off with Spindrift Pineapple, garnish with mint and cherries, and serve immediately.
