How is it already March?! Spring is right around the corner, but in the meantime, we're filling up on all the end of winter goodies. Tofu, fritters, baked eggs, and glazed salmon. Hope you came hungry!

THE GROCERY LIST

1 (2-inch) knob ginger
1 pound baby bok choy
2 pounds carrots

1 yellow onion
1 red onion
1 head garlic
1 bunch scallions

1 bunch dill
1 bunch Thai basil
1 (3 pound) whole salmon fillet
1 dozen eggs
1 (16 ounce) block firm tofu
1 (16 ounce) tub ricotta
1 block Parmesan cheese
1 package Mexican cheese blend
1 bag vegan cheese
1 (32 ounce) carton almond milk
1 small jar gochujang paste
1 (15.5 ounce) can black beans
1 (15 ounce) can chickpeas
1 (14.5 ounce) can fire roasted diced tomatoes
1 pint pineapple juice
1 package rice papers
1 pound gluten free spaghetti
