We're cruising through April with a full week of delicious recipes. Potstickers? Yes! Potato croquettes? You bet! Soba noodle salad? What's a meal plan without one?! Happy cooking!

THE GROCERY LIST

1 (6 ounce) box spinach
2 heads garlic
2 bunches fresh cilantro
2 (1 inch) knobs ginger
1 pound portobello mushrooms
2 yellow onions
1 lemon
¾ pound cremini mushrooms
5 shiitake mushrooms
2 avocados
2 heads broccolini
1 ½ pounds russet potatoes
1 pound carrots
1 (7 ounce) bag shredded vegan mozzarella
1 (13 ounce) bag vegan ground meat substitute
2 (14 ounce) blocks extra firm tofu
1 quart plant-based milk of choice
1 pound soba noodles
2 quarts vegetable broth
1 (13.5 ounce) can coconut milk
1 (13.5 ounce) can chickpeas
1 (6 ounce) can tomato paste
1 loaf bread
1 (12 ounce) bag frozen blueberries
1 (12 ounce) bag frozen edamame
