"I just LOVE s’mores!! They’re my favorite summer treat. So naturally, I’ve been wanting to make a s’mores themed dessert - like these delicious brownies. :) They’ve got a graham cracker crumb base and a fudgy brownie layer topped with toasted mini marshmallows. It’s a s’mores lovers dream!"

Graham Cracker Base

  • 1 1/4 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 5 tablespoons butter, melted

Brownie Layer

  • 1 1/4 cups brown sugar
  • 1/3 cup oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup chocolate chips

  • 1 cup mini marshmallows

Method

  • Step 1

    Preheat your oven to 350 degrees and line an 8x8 in baking pan with parchment paper.

  • Step 2

    Add the graham cracker crumbs and sugar to a small bowl. Stir in the melted butter. Spoon this mixture into your lined baking pan and use the bottom of a glass to press it down into a even, firm layer. Place this in the oven to bake for 5 minutes. Remove and set aside. (Keep oven on.)

  • Step 3

    In a large bowl, combine the brown sugar, oil, melted butter, eggs, vanilla extract, and unsweetened cocoa powder.

  • Step 4

    Add the flour, salt, baking powder, and baking soda. Stir to combine. Fold in the chocolate chips. Evenly spread this batter on top of the graham cracker base. Bake for 25-30 minutes or until a toothpick inserted into the center comes out mostly clean.

  • Step 5

    Remove your brownies from the oven and sprinkle the mini marshmallows into an even layer on top. Place them back in and broil for 5 minutes to toast the top. Place your brownies on a wire rack to cool completely before slicing. Enjoy!
