These soft cookie sandwiches will put you into the holiday spirit. Two soft and chewy sugar cookies are put together with a subtly minty-crunchy candy cane-flavored buttercream. There's nothing not to love about these, and even those who don't like minty flavors will keep coming back for more.

Cookies
- 1 stick (1/2 cup) butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 1/2 teaspoon vanilla extract
- 1 1/2 cups flour
- 2 teapsoons corn starch
- 3/4 teaspoon baking soda
- pinch of salt
- 5 standard candy canes, crushed, plus more to decorate

Frosting
- 3/4 cup butter, softened
- 2 1/4 cups powdered sugar
- 3/4 teaspoon vanilla extract
- 1 tablespoon milk
Method
Step 1
Preheat oven to 350ºF. Grease a cookie sheet.
Step 2
In a large bowl, cream together the butter, sugar, egg, and vanilla extract.
Step 3
Add the flour, corn starch, baking soda, and salt. Combine until a dough forms. Fold in the crushed candy canes, reserving a few pieces to decorate the tops of your cookies.
Step 4
Shape the dough into 12 thick discs. Place the discs about 3 inches apart on your baking sheet. Decorate with the remaining crushed candy canes. Bake for 9 minutes, and transfer to a wire rack to let cool.
Step 5
Make the buttercream. Place the softened butter in a large bowl and beat with an electric mixer. Add the powdered sugar one cup at a time, beating to combine after each addition. Finally, add the vanilla extract and milk and beat until combined.
Step 6
Pipe frosting onto the bottom side of a cookie. Sandwich another cookie on top and proceed until you have six big cookie sandwiches. Enjoy!
