ingredients

  • 1 stick (1/2 cup) softened Butter
  • 1 cup Sugar
  • 1 Egg
  • 2 tabelspoons Oil
  • 1 teasoon Vanilla Extract
  • 3/4 cup Creamy Peanut Butter
  • 1 1/2 cups All-Purpose Flour
  • 1 teasoon Baking Powder
  • pinch Salt

Method

  • Step 1

    Cream together the softened butter and sugar. Add the egg, oil, vanilla extract, and creamy peanut butter. Stir until just combined.

  • Step 2

    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually stir this dry mixture into the wet one until just combined.

  • Step 3

    Using two (measuring) tablespoons for each cookie, roll the dough into 20 balls. Then, use a fork to press a checkerboard pattern into each one. Place your now slightly flattened dough balls on a large plate or tray, and then cover it with plastic wrap and place it in the refrigerator for 1 hour to chill.

  • Step 4

    Once the dough has been chilled, preheat your oven to 350 degrees and grease a large baking sheet. Place the cookies on your baking sheet, about three inches apart, and bake for 9 minutes. Cool on a metal baking rack and enjoy!
