ingredients
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup (2 sticks) butter, softened
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs, plus 1 yolk
- 1 teaspoon vanilla extract
- 3 cups old fashioned oats
- 11 ounces butterscotch chips
Method
Step 1
Preheat oven to 375 degrees and line a cookie sheet with parchment paper.
Step 2
In a medium bowl, whisk together the flour, baking soda, salt and cinnamon. Set aside.
Step 3
In another, larger bowl, cream together the softened butter and sugars. Add in the eggs (plus extra yolk) and vanilla extract. Mix until smooth.
Step 4
Slowly incorporate the flour mixture until just combined. Stir in the oats and butterscotch chips.
Step 5
Roll (rounded tablespoons) of dough into balls and place onto your prepared baking sheet. Bake for 8 minutes. Cookies will be slightly under-baked, but will continue to bake/set once you remove them from the oven. Place on a wire rack to cool. Enjoy!
