No-Churn Strawberry Ice Cream

ingredients
- 1 1/4 cups washed, hulled and chopped strawberries
- 1 14 ounce can sweetend condensed milk
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
Method
Step 1
Place the chopped strawberries in a large bowl and use a wooden spoon/potato masher/pastry cutter/etc. to mash them until the mixture is mostly smooth. You could also use a food processor or blender to purée them.
Step 2
Then, stir in the sweetened condensed milk and vanilla extract and set aside.
Step 3
Pour the heavy cream into another large bowl and whisk with an electric hand or stand mixer for a few minutes until soft peaks form. (When the whisk/beater is lifted from the mixture, a soft triangular peak of heavy cream should be standing on the end.)
Step 4
Gently fold this whipped cream into the strawberry mixture until just combined. You want to try and retain as much air as possible.
Step 5
Then, line an 8x8 inch pan with parchment paper and evenly spread the ice cream into it. Cover this with a few layers of plastic wrap or tinfoil and place it in the freezer overnight for optimum texture. Scoop and enjoy!
