ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tabelspoons sugar
  • 4 tablepoons butter, cold and cut into cubes
  • 1/2 cup buttermilk
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 3/4 cup raspberries
  • 3/4 cup blueberries

Method

  • Step 1

    To make the biscuits, whisk together the flour, baking powder, baking soda, and 1 tablespoon sugar in a large bowl.

  • Step 2

    Add the cubed cold butter, and cut it in with a fork or a pastry cutter until crumbs form. Gradually stir in the buttermilk to create a dough.

  • Step 3

    Preheat your oven to 375 degrees. Roll out your dough on a floured surface until it’s about 3/4 - 1 inch thick. Using a 2 1/2 inch round cutter (or a glass that is close to that diameter), cut out six biscuits. You’ll have to roll the dough scraps together again after cutting the first few.

  • Step 4

    Place your biscuits (so that they are all slightly touching,) on a baking sheet that has been lined with parchment paper. Bake for 15 minutes. Remove them from the oven and place the biscuits on a metal rack to cool.

  • Step 5

    To make the whipped cream, place the heavy cream, remaining sugar, and vanilla in a bowl. Using a stand/hand mixer, blend on medium high for 2-3 minutes - until soft peaks form.

  • Step 6

    To assemble, rinse the blueberries and raspberries for the filling. Slice a biscuit in half, layer the bottom with berries and whipped cream, and top with the other half of the biscuit. Enjoy!
