Brownie Ingredients

  • 1 1/4 cups packed brown sugar
  • 1/3 cup oil
  • 3 tablespoons butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

  • 3/4 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon mint extract
  • green food coloring
  • 8 crushed mint oreo cookies

Ganache Ingredients

  • 1/2 cup heavy cream
  • 1 cup chocolate chips

Method

  • Step 1

    Preheat your oven to 350 degrees and line an 8x8 inch baking pan with parchment paper.

  • Step 2

    In a large bowl, combine the brown sugar, oil, melted butter, eggs, vanilla extract, and unsweetened cocoa powder.

  • Step 3

    Add the flour, salt, baking powder, and baking soda. Stir to combine. Evenly spread this batter into your prepared pan. Bake for 30 minutes or until a toothpick inserted into the center comes out mostly clean. Remove from the oven and place on a wire rack to cool before frosting.

  • Step 4

    To make the frosting, place the softened butter in a large bowl and blend (using a stand or hand mixer) until smooth. Add in the powdered sugar, 1/4 cup at a time, mixing to combine after each addition.

  • Step 5

    Add the milk, mint extract, and a few drops of green food coloring. Mix to combine. Finally, add the crushed Mint Oreos and blend one last time. Spread this frosting evenly on top of your cooled brownies in the pan. Cover and place in the fridge to chill for 30 minutes.

  • Step 6

    Make the ganache by pouring the heavy cream in the microwave for 45 seconds. Pour this over the chocolate chips whisk until smooth. Spread this mixture on top of the frosting layer of your brownies, and place back in the fridge to set for at least 30 minutes.

  • Step 7

    Once set, slice and enjoy!
