ingredients
- 1 cup milk
- 2 large eggs
- 4 tablespoons butter, melted
- 1/2 teaspoon vanilla extract
- zest of 1 large lemon
- 2 tablespoons lemon juice
- 1 1/3 cups flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon poppyseeds

Icing Ingredients
- 1 1/4 cup Powdered Sugar
- 3 tablespoons Lemon Juice
Method
Step 1
In a large bowl, stir together the flour, sugar, baking powder, salt and poppyseeds.
Step 2
Add in the milk, eggs, melted butter, vanilla extract, lemon zest and juice. Stir until just combined - a few small lumps are okay.
Step 3
Place a large non-stick pan on medium-low heat and grease it with some butter or oil. Scoop 1/3 cup of the batter and pour it on to the pan. Cook the pancake on the first side until bubbles start to form around the edges and the bottom is golden brown (about a minute). Then, flip it and cook the other side. Remove it from the pan and repeat this process with the remaining batter. This should make 6-7 pancakes.
Step 4
To make the icing, whisk together the powdered sugar and lemon juice until smooth. Drizzle on top of your pancakes and enjoy!
