ingredients
- 1 1/2 cups flour, leveled
- 3/4 cup, plus 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 2/3 cup milk
- 1/4 cup butter, melted
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/3 cup orange zest
- 1 1/4 cups cranberries, washed and dried
Method
Step 1
Preheat oven to 350ºF. Grease and flour a 8 1/2 x 4 1/2 inch loaf pan.
Step 2
In a large bowl, stir together the flour, sugar, baking powder, baking soda, salt and cinnamon.
Step 3
Add the milk, melted butter, egg, vanilla extract, and orange zest. Stir until just combined, a few remaining lumps are okay. (Over stirring will cause your bread to become too dense.) The batter will be a bit thick.
Step 4
Gently fold your cranberries into the mixture and spoon the batter into your prepared loaf pan. Sprinkle the remaining tablespoon of sugar evenly over the top. Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out with only a few crumbs stuck to it.
Step 5
Set on a wire rack to cool, and enjoy!
