ingredients

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 7 tablespoons butter, melted

Filling

  • 2 boxes instant chocolate pudding (3.9 oz each)
  • 4 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • optional garnish: shaved chocolate

Method

  • Step 1

    In a large bowl, use a fork to combine the graham cracker crumbs, brown sugar, and melted butter. Pour this mixture into a 9 inch standard pie pan and use the bottom of a glass to press it down and form it into a compact crust.

  • Step 2

    Place this in a 350 degree oven to bake for 10 minutes. Remove and let cool completely before filling.

  • Step 3

    Pour the contents of the pudding boxes into a large bowl along with the 4 cups of cold milk. Whisk together for 2 minutes and then pour into your cooled crust. Place this in the fridge for at least 10 minutes to set completely.

  • Step 4

    Make the whipped cream by placing the heavy cream, sugar, and vanilla extract into a large bowl. Using an electric hand or stand mixer, whisk on medium-high for 3-4 minutes or until stiff peaks form. If you remove your whisk from the cream, a triangular peak should stick to the base - with just the tip of it falling over.

  • Step 5

    Evenly spread the whipped cream on top of your pie and garnish with chocolate shavings. Slice and serve immediately or place in the fridge for later. Enjoy!
