- 2 cups All-Purpose Flour
- 12 tablepoons cold and cut into cubes Butter
- 11 tablespoons ice cold Water
- 3 1/4 cup pitted and sliced Cherries
- 1 teaspoon Lemon Juice
- 1/3 cup Sugar
- 3 tabelspoons Flour
Method
Step 1
To make the dough, scoop two leveled cups of flour into a large bowl. Add the cold and thinly sliced (about 1/4 inch) butter and use a pastry cutter or a fork to combine it. A few larger pieces of butter remaining in the mixture are okay. Next, add 11 tbsp of ice cold water and stir until a dough has formed.
Step 2
Slightly flatten your dough ball into a disc, and then cover it in plastic wrap. Place it in the fridge to chill for 1 hour.
Step 3
Meanwhile, prepare your filling. In a large sauce pan, combine the sliced cherries, lemon juice, and sugar. Cook on high heat for 5 minutes, stirring consistently. Stir in the flour to thicken, and then turn off the heat. Pour your filling into a bowl, and allow it to cool completely before spreading it on the dough.
Step 4
Once your dough is chilled, remove it from the plastic wrap and begin to roll it out on a floured surface. Your going for a 1/4 in thick circle. Once this is done, transfer your dough to a lightly floured pizza pan.
Step 5
Preheat your oven to 400 degrees.
Step 6
Spread your cooled filling onto the dough, leaving about 2-3 inches of empty space around the diameter. Fold this extra dough over the filling, and place your galette into the oven to bake for 30 minutes - or until the crust is golden brown.
Step 7
Let it cool for at least 15 min before serving. Enjoy!
