ingredients

  • 1 teaspoon instant yeast
  • 1 teaspoon granulated sugar
  • 1/2 cup warm water, between 100-110 degrees
  • 2 cups bread flour, plus more for working with the dough
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 cup pesto
  • 16 ounces fresh mozzarella cheese, cut into 1/4 inch slices
  • 3 medium tomatoes, cut into 1/4 inch slices

Method

  • Step 1

    Place yeast and sugar in a large bowl. Top with warm water and stir. Cover the bowl with a kitchen towel and let sit for 5 minutes.

  • Step 2

    Add in the bread flour, salt, garlic powder and olive oil. Stir together until a rough dough forms and then turn out onto a floured surface. Knead for 5 minutes – or until the dough is smooth.

  • Step 3

    Place into a lightly greased bowl and cover with plastic wrap. Let rise for 45 minutes, at room temperature.

  • Step 4

    Once it has risen, preheat your oven to 475 degrees. Line a large sheet pan with parchment paper and set aside. Divide dough in half and place on a floured surface. Roll out each flatbread until roughly ¼ inch thick and place them on your prepared pan.

  • Step 5

    Spread half of the pesto on each pizza, and top with fresh mozzarella and tomato slices.

  • Step 6

    Place into the oven and bake for 15-20 minutes. Remove and allow to cool for a bit before slicing and serving. Enjoy!
