ingredients

  • 1 pre-made frozen pie shell
  • 4 large eggs
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup diced Canadian bacon
  • 3/4 cup asparagus, cut into 1 inch pieces

Method

  • Step 1

    Preheat your oven to 375 degrees. Set your pie shell on the counter to thaw while you prepare the quiche filling.

  • Step 2

    In a large mixing bowl, whisk together the eggs, milk, heavy cream, salt and pepper. Set aside.

  • Step 3

    Use a fork to poke holes all over the base and up the sides of your pre-made pie shell (or prepare the crust with parchment paper & pie weights). Place on a baking sheet in the middle of your oven and bake for 12 minutes.

  • Step 4

    While that’s baking, lightly sauté the asparagus with a drizzle of olive oil for 4-5 minutes on high heat - until it just begins to soften. Set aside.

  • Step 5

    Once your crust is par-baked, remove from the oven (still on baking sheet) and reduce heat to 350 degrees. Layer in the cheese, asparagus and bacon. Save a small amount of each to sprinkle on top of the quiche halfway through the baking process.

  • Step 6

    Pour the egg mixture over this. Place the sheet pan + quiche in the oven bake for 20 minutes, then quickly sprinkle the reserved filling ingredients on top. Continue to bake for 20-25 minutes, or until the center is just about set (and a tiny bit wobbly).

  • Step 7

    Remove from oven (and baking sheet) and set quiche on a wire rack to cool for 15 minutes. Slice, serve, and enjoy!
