ingredients
Filling Ingredients:
- 1 1/2 cups Blueberries
- 1/4 cup Sugar
- 1 tablespoon Lemon Juice
- 1 tablespoon All-Purpose Flour

- 2 cups All-Purpose Flour
- 12 tablespoons cold and cut into cubes Butter
- 11 tabelspoons ice cold Water

Glaze Ingredients:
- 1 cup Powdered Sugar
- 1/2 teaspoon Vanilla Extract
- 1 tablespoon Water
Method
Step 1
To make the dough, scoop two leveled cups of flour into a large bowl. Add the cold and thinly sliced (about 1/4 inch) butter and use a pastry cutter or a fork to combine it. Next, add 11 tbsp of ice cold water and stir until a dough has formed.
Step 2
Slightly flatten your dough ball into a disc, and then cover it in plastic wrap. Place it in the fridge to chill for 1 hour.
Step 3
Meanwhile, add the blueberries, sugar, lemon juice, and flour to a medium sauce pan. Stir/mash the mixture as it cooks on high for 7-10 minutes. Remove this from the heat, and allow it to come to room temperature.
Step 4
Once your dough has chilled, roll it out onto a floured surface. You want it to be about 1/4 in thick. Use a sharp knife to cut ten (5 in X 3 in) rectangles of dough. Place half of your dough rectangles on a parchment paper lined baking sheet.
Step 5
Preheat your oven to 400 degrees. Scoop 2 tbsp of the blueberry filling onto the centers of all 5 rectangles that are on your baking sheet. Make sure to leave about 1 in of space around the edges, and brush a little water on that open space to help seal the dough together. Place the remaining rectangles on top of each one, and use a fork to crimp them down/seal them around the filling. Poke a few small holes in the tops to allow for steam.
Step 6
Bake the pop-tarts for 25 minutes. Remove from the oven, and place on a wire rack to chill.
Step 7
To make the icing, combine the powdered sugar, vanilla extract, and water. Drizzle it over your cooled pop-tarts and enjoy!
