ingredients

  • 2/3 cup sugar
  • 2 tablepoons brown sugar
  • 12 tbsp melted butter
  • 1 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoon cinnamon
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 2/3 cups blueberries
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 4 tablespoons cold and cut into cubes butter

Method

  • Step 1

    To make the cake, white sugar, 2 tablespoons brown sugar, melted butter, milk, eggs, and vanilla extract in a large bowl. In a separate bowl, combine the cinnamon, 2 cups flour, and baking powder. Incorporate the dry mixture into the wet, stirring until just combined. Make sure not to over-stir, it’s okay if there are small lumps in your batter. Gently fold in the blueberries.

  • Step 2

    To make the streusel topping, use a fork to combine 1/2 cup brown sugar, 2/3 cup flour, and 4 tbsp cold cubed butter until small crumbs form.

  • Step 3

    Preheat your oven to 350 degrees. Grease and flour a 9 inch cake pan. Pour in the cake batter, and then sprinkle the streusel evenly on top. Bake for 50 minutes - 1 hour, or until a toothpick inserted in the center comes out clean. Remove from your oven, and place on a wire rack to cool. Enjoy!
