ingredients

Scone Ingredients:

  • 3/4 cup All Purpose Flour
  • 1 1/2 teaspoon Baking Soda
  • 1/3 cup Sugar
  • 1/4 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Allspice
  • 4 tablepoons cold and cut into cubes Butter
  • 1 medium Banana
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk, plus more for brushing

Glaze Ingredients:

  • 4 tabelspoons Buter
  • 1 cup Powdered Sugar
  • 2 tablepoons Milk

Method

  • Step 1

    In a large bowl, whisk together the flour, baking soda, sugar, salt, cinnamon, and allspice.

  • Step 2

    Add in the 4 tbsp of cold cubed butter, and use a fork or a pastry cutter to work it into the flour until uneven crumbs begin form.

  • Step 3

    Stir in the mashed banana, vanilla extract, and milk until a sticky dough comes together.

  • Step 4

    Scrape your dough out on to a well floured baking sheet. Sprinkle some more flour on top, and shape the dough into a 5 in disc.

  • Step 5

    Using a very sharp, floured knife, cut six wedges from the circle of dough. Pull each one out slightly, so that they are about 1/2 in apart. Place your scones in the freezer to chill for 30 minutes before baking.

  • Step 6

    Once it’s close to baking time, preheat your oven to 425 degrees. Remove your scones from the freezer, and brush the tops of each one with a little milk. Place them in the over to bake for 18 minutes. Remove and set them on a wire rack to cool completely before glazing.

  • Step 7

    To make the glaze, place 4 tbsp of butter in a light colored pan. Begin to melt it on medium high, stirring constantly. The butter will begin to foam, and once it turns a toasty brown color - it’s done!

  • Step 8

    In a small bowl, combine the brown butter with the confectioners sugar and milk - adding more milk if it’s too thick. Use a spoon to drizzle this glaze on your scones and enjoy!
